A celebration of the fermentation process bringing together science, education and the best of regional produce for a one-day festival. Immerse yourself in this unique event set against the charming backdrop of historic Rylstone and Kandos in regional New South Wales.

Fermenta is proudly presented by Mid-Western Regional Council, together with Cementa and Mudgee Region Tourism.


Lyttleton Stores Co-operative is a not-for-profit community enterprise in Lawson in the Blue Mountains. We are a collective of people, combining our loves of organic home grown food and artisan made craft ware. Our mission is to connect customers, makers, and growers, encouraging conscious, ethical, local economies as well as transitioning to a no-waste, lower energy future.

Fermenting, pickling, and preserving food is all about storing Summer’s abundance of produce.

Join Lyttleton Stores' Kitchen Coordinator, Jeri, for this educational and fun workshop where she will demonstrate a variety of different techniques you can take home and apply to various fruits and vegetables this season. Fermenting, pickling and preserving not only enables us to store our food and enhance its nutritional content and flavour, it also introduces the kinds of good bacteria into our diet that can have an incredibly positive impact on our digestive and general health and wellbeing.

We will be working with local, seasonally available, organically grown produce during the workshop, learning the basic techniques for quick pickles, salt brines, and fermented vegetables. Using these basic techniques, some simple equipment, a few ingredients, and a little time, anyone can learn to confidently and safely preserve their own food. We will also get creative and experiment with different herb and spice flavour profiles, and you will learn how to pair these with different types of produce to enhance the look, taste, therapeutic value, and uniqueness of your preserves.     


Please arrive 10 minutes before starting time so that we can greet and start classes straight away. There is a lot to learn.

There is ample street parking near the venue, North East Wiradjuri Cultural Centre 28 Angus Ave, Kandos NSW 2848

Clothing – please wear comfortable and enclosed shoes. Clothing should allow the sleeves to be rolled up and allow for movement. Hair should be tied back from your face.

• Unless required to by law NO REFUND OR EXCHANGE will be given except for in the unlikely circumstances of cancellation of the event by the organiser. Refund liability is limited to the total amount of the Ticket purchase (including any fees or charges). The seller is not liable for expenses incurred as a result of the cancellation.
• Mid-Western Regional Council reserves the right to alter or cancel, without prior notice, any of the arrangements relating directly or indirectly to an event, for any circumstances beyond the Mid-Western Regional Council’s reasonable control. This includes the cancellation of an event itself. Mid-Western Regional Council’s maximum liability is limited to a full refund of the ticket price. Mid-Western Regional Council accepts no additional liability for travel, accommodation or any other additional costs incurred.
