A celebration of the fermentation process bringing together science, education and the best of regional produce for a one-day festival. Immerse yourself in this unique event set against the charming backdrop of historic Rylstone and Kandos in regional New South Wales.

Fermenta is proudly presented by Mid-Western Regional Council, together with Cementa and Mudgee Region Tourism.


Event: Breakfast with an Alpaca by Lindsay Kelley

Artist Lindsay Kelley invites you to a truly immersive experience at Fermenta. 

At this breakfast you will share a meal with local alpacas. Why? Because Alpacas have a very special digestive system that uses fermentation to break down food.  

Following “rumination” across animal science (chewing cud), psychology (obsessive thoughts), and philosophy (reflection and contemplation), the workshop promotes the idea that fermentation crocks and jars might be regarded as external stomachs. Fermented foods help single-stomach humans understand and appreciate food and eating across species.

Together we will learn about the differences between human and alpaca digestive systems. In addition to learning what alpacas like to eat, we will eat a fermented breakfast composed of some of the alpaca’s favourite foods.

Learn about Lindsay Kelley: 

Working in the kitchen, Lindsay Kelley's art practice and scholarship explore how the experience of eating changes when technologies are being eaten. Her first book is Bioart Kitchen: Art, Feminism and Technoscience (London: IB Tauris, 2016). Her writing can be found in journals including parallax, Transgender Studies Quarterly, Angelaki, and Environmental Humanities. She has exhibited and performed her work internationally, and is currently developing a project about everyday militarisms with a focus on biscuits. She is the recipient of an Australian Research Council Discovery Early Career Researcher Award (2019-2021).  


Please arrive 10 minutes before starting time so that we can greet and start classes straight away. There is a lot to learn.

The workshop will be held outdoors. Please bring sun protection and water.

There is ample street parking in Rylstone. Please factor in a 5-10 minute walk to get to the Animal Stalls at Rylstone Showground. 

Clothing – please wear comfortable and enclosed shoes. Clothing should allow the sleeves to be rolled up and allow for movement. Hair should be tied back from your face.

• Unless required to by law NO REFUND OR EXCHANGE will be given except for in the unlikely circumstances of cancellation of the event by the organiser. Refund liability is limited to the total amount of the Ticket purchase (including any fees or charges). The seller is not liable for expenses incurred as a result of the cancellation.
• Mid-Western Regional Council reserves the right to alter or cancel, without prior notice, any of the arrangements relating directly or indirectly to an event, for any circumstances beyond the Mid-Western Regional Council’s reasonable control. This includes the cancellation of an event itself. Mid-Western Regional Council’s maximum liability is limited to a full refund of the ticket price. Mid-Western Regional Council accepts no additional liability for travel, accommodation or any other additional costs incurred.
