A celebration of the fermentation process bringing together science, education and the best of regional produce for a one-day festival. Immerse yourself in this unique event set against the charming backdrop of historic Rylstone and Kandos in regional New South Wales.

Fermenta is proudly presented by Mid-Western Regional Council, together with Cementa and Mudgee Region Tourism.



Event: An Artist, A Wine Maker and a Scientist talk about Fermentation 

1.30pm at Kandos Community Hall

This panel will discuss the fascination with fermentation through three different perspectives: that of a Wine Maker, a Scientist and an Artist.

The Scientist  

Andrew Holmes is an Associate Professor School of Life and Environmental Sciences at the University of Sydney.  His research interest is the role of gut microbial diversity in human health; exploring microbial diversity for new biological resources; and the underlying evolutionary origins of microbial diversity.

The Artist

Lindsay Kelley is an artist and writer focused on food and eating. She is interested in the digestive networks we form when we share food across space and species, and her art practice and scholarship explore how the experience of eating changes when technologies are being eaten.

The Wine Maker

Will de Beaurepaire is responsible for winemaking at De Beaurepaire Wines, an award winning family run wine business in nearby Rylstone NSW. He also sits on the board of the NSW Wine Industry Association. He is a passionate advocate of the Australian wine industry, and the importance of terroir and its interaction with the vine in winemaking.

Hot off the press! Join Kandos School of Cultural Adaptation for the gala launch of  "An artist, a farmer and a scientist walk into a bar...". Born in Kandos, this special edition newspaper is a heady brew of farming, innovation and art from regional NSW and beyond. KSCA (Kandos School of Cultural Adaptation) has compiled more than 25 essays, poems, songs and beautiful pictorials that ferment relationships between people led by a common question: how can we better care for our landscapes in these volatile times? Join the team for drinks, nibbles and an informal conversation with special guests. 



Please arrive 10 minutes before starting time so that we can get started. 

There is ample street parking near the Kandos Community Hall - 44 Angus Ave, Kandos NSW 2848.

• Unless required to by law NO REFUND OR EXCHANGE will be given except for in the unlikely circumstances of cancellation of the event by the organiser. Refund liability is limited to the total amount of the Ticket purchase (including any fees or charges). The seller is not liable for expenses incurred as a result of the cancellation.
• Mid-Western Regional Council reserves the right to alter or cancel, without prior notice, any of the arrangements relating directly or indirectly to an event, for any circumstances beyond the Mid-Western Regional Council’s reasonable control. This includes the cancellation of an event itself. Mid-Western Regional Council’s maximum liability is limited to a full refund of the ticket price. Mid-Western Regional Council accepts no additional liability for travel, accommodation or any other additional costs incurred.
